Grilled Tuna Steaks

Serves: 4
Ingredients:
Juice from 1 fresh lemon (about 2 Tablespoons)
1 Tablespoon vegetable oil
2 teaspoons minced garlic
½ teaspoon dried thyme
4 tuna steaks (about 6 ounces each)
Fresh lemon slices or wedges for garnish, if desired
Preparation:
About 30-35 minutes before serving, prepare the marinade by mixing together the lemon juice, vegetable oil, minced garlic and thyme. Place the tuna steaks in a shallow, flat plastic bowl and pour the marinade over them. Cover and place in the refrigerator for 10 minutes. Turn over the tuna steaks to distribute the marinade and return to the refrigerator for another 10 minutes.
Preheat the grill for about 5 minutes on a medium high heat. Place each tuna steak on the grill for just a few seconds to sear it with the heat. Then flip them over. Grill for 4 minutes on this side, then flip them over and continue grilling for about 3 minutes. Do not overcook. Garnish with lemon wedges and serve immediately.
Notes:
Do not marinate the tuna steak longer than 20-30 minutes or it will get mushy.
Before juicing the lemon, I use a fine grater to zest the rind and save that in a small plastic container in the refrigerator for another use.
This marinade works well on other fish. I recently used it on swordfish steaks and it was delicious.
