Baked Pineapple Bread Pudding

Ingredients:
½ cup butter, softened
¾ cup sugar
1 dash salt
3 large eggs, lightly beaten
1 can (20 ounces) crushed pineapple, half drained
5 slices white sandwich bread (fresh or stale), cubed
Preparation:
Preheat oven to 325°
In mixing bowl, using electric hand mixer, cream butter and sugar, add eggs and beat. Add remaining ingredients and mix gently with spoon.
Place mixture into a 1½ quart casserole dish, bake uncovered for 40 – 50 minutes.
Notes:
This makes a great side dish for ham dinners but can also be a dessert. Delicious warm or cold, served with whipped cream or ice cream or just by itself.

I love to serve this as a side dish for a ham dinner or with Kielbasa-based recipes. Also a big hit at pot lucks – it looks pretty, people like it, and no one else will be bringing this unique dish!
