Cabbage Steaks

Serves: 4-6
Ingredients:
1 ½ cups balsamic vinegar
½ cup brown sugar
1 medium head of cabbage
3-4 Tablespoons Extra Virgin Olive Oil
2 Tablespoons minced garlic
Preparation:
Preheat oven to 375°
In a small saucepan over medium heat, bring the balsamic vinegar and brown sugar to a low boil, stirring often. Reduce the heat and simmer for 20- 30 minutes, stirring frequently to avoid burning.
Meanwhile, remove any curled or loose leaves from the cabbage. Slice it into steaks, about ¼ – ½ inch thick, leaving the core intact and allowing one steak per person. Set aside any unused cabbage for other use.
Arrange the cabbage steaks side by side in a single layer on a sheet pan or large baking dish. Drizzle the olive oil over the cabbage. Spread the minced garlic over each steak.
Bake on the oven’s middle rack for about 15 minutes. Remove the pan and use a spatula to flip over each steak. Drizzle the hot balsamic vinegar over each cabbage steak.
Return them to the oven for another 15 minutes, or until fork tender. Serve warm, with additional balsamic vinegar.
Notes:
This is a great alternative to boiled cabbage to accompany corned beef or kielbasa sausages.
