Special Occasion Prime Rib Roast

Serves: 6

Ingredients:
1 USDA Prime Beef Rib Roast, 3 – 5 pounds with at least 3 ribs
4 Tablespoons seasoning rub, such as McCormick’s Montreal Steak

Preparation:
Preheat oven to 450°

Generously rub the roast with the seasoning mix on all sides.

Place the roast, ribs on the bottom, into a shallow baking pan and into the preheated oven on the center rack.

Bake at 450° for 15 minutes. Do not open the oven door and reduce the temperature setting to 325°. Roast for 15-17 minutes per pound for a nice medium rare: a 5 pound roast needs 1¼ to 1½ hours.

Remove from the oven, cover with aluminum foil, and leave on the counter to finish cooking, about 20 minutes. This resting time is important to let the juices finish permeating throughout the roast.

Serve warm, with a side of horseradish sauce and the traditional Yorkshire Pudding.

Notes:
Very Important: the roast needs to be taken out of the refrigerator and brought to room temperature before roasting, about 2 hours.
