Impossible Cheeseburger Pie

Serves: 6
Ingredients:
1 pound Ground Beef
1 small onion, chopped (about 1 cup)
½ teaspoon salt (or salt substitute)
1 cup Cheddar Cheese, shredded
2 eggs
1 cup milk
½ cup Bisquick
Preparation:
Preheat oven to 400°
Lightly grease the bottom and sides of a 9″ pie plate or glass ovenware.
In a frying pan, cook the ground beef and onion until the beef is brown and onions are translucent. Stir in salt.
Spread the ground beef and onion mixture in the pie plate.
Sprinkle the cheddar cheese over the ground beef mixture.
In a small bowl, use a fork to stir together the eggs and milk.
Slowly add the Bisquick into the milk mixture and stir until blended. Batter will be slightly lumpy.
Pour the batter over the ground beef mixture.
Bake about 25 minutes, until knife inserted in center of pie comes out clean.

This is the original recipe from the Bisquick box.
To make a slightly larger pie for bigger appetites, use a deep dish pie plate or larger baking dish and:
- increase the milk to 1-½ cups,
- use 3 eggs instead of just 2, and
- increase the Bisquick to ¾ cup.
There are dozens of recipe variations. Here are some of the ingredients that I have added or substituted and enjoyed:
Add ½ cup of green pepper, chopped
Add 1 cup of sliced mushrooms
Add sliced tomatoes sprinkled with oregano and basil to the top of the pie just 5 minutes before finished baking.
Substitute a shredded cheese mixture for the cheddar, such as shredded Monterey Jack and Colby.
Add a small can of corn, drained, after adding the cheese and before pouring the batter.
Add different spices, such as a teaspoon of Italian seasoning, ½ teaspoon of garlic powder or a few shakes of Grillmates hamburger seasoning mix.
Drizzle a thin line of ketchup over each slice before serving.
Substitute venison for the ground beef.
