Noreen’s Meat Loaf

Serves: 6
Ingredients:
2 each large eggs
¼ cup milk
2 slices of fresh or day-old white bread, cubed
¾ cup chopped Vidalia onion
¼ cup chopped green pepper
2 ½ teaspoons sea salt
1 Tablespoon prepared mustard
¾ cup ketchup, divided
1 ½ pounds ground beef
½ pound ground sweet Italian sausage
Preparation:
Preheat oven to 400° and lightly spray the bottom of a 9″ x 5″ loaf pan with cooking spray.
In a large bowl, lightly beat the eggs and then add in each of the rest of the ingredients except for ¼ cup of the ketchup, stirring after each addition. Gently shape into a loaf and place in prepared loaf pan. Leave about ½” between the pan and each side of the meat loaf. Drizzle the remaining ¼ cup ketchup across the top.
Bake for 50 minutes. Pour off excess juices before serving.
Notes:
I like to serve this with scalloped potatoes, green peas, fried apple slices and oven fresh soft rolls.
A nice variation is to replace the green peppers with ½ cup of chopped mushrooms and add 1 Tablespoon of grated lemon zest.
