Breaded And Baked Chicken Or Turkey Cutlets
14 each chicken or turkey cutlets, rinsed and drained
½ cup seasoned bread crumbs
1 tablespoon butter
Preheat oven to 400°
Put butter in a 13ʺ x 9ʺ x 2ʺ pan, put in oven to melt butter. When butter is melted, remove pan from oven.
Place bread crumbs into a large zip-lock baggie. Add 2 cutlets to baggie, seal and shake. Place cutlets in pan, repeat with remaining cutlets.
Put cutlets in oven, cook for 8 minutes. Turn cutlets over, return to oven for another 8 minutes.
Serve with warmed fat free canned (actually in a jar) gravy.
This recipe assumes that the cutlets are very thin. I have also done this with thin pork cutlets and it has turned out well.
