Baked Scallop Casserole

Serves: 4
Ingredients:
1 pound scallops, rinsed and drained
⅓ cup milk, 2% lowfat
¼ teaspoon salt
¼ teaspoon pepper
½ cup butter, melted
1 cup Ritz crackers, crushed
1 teaspoon lemon juice, bottled or fresh
Preparation:
Preheat oven to 350°
Place scallops in a greased casserole dish. Pour milk over scallops, sprinkle with salt, pepper and lemon juice.
Bake for 10 – 12 minutes.
While scallops are baking, in a small mixing bowl, mix cracker crumbs with melted butter.
When scallops are finished baking, remove from oven and turn oven setting to broil. Spread cracker mixture evenly over the top of the scallops. Return scallops to broiler broil just until golden brown (should only take a few minutes, watch closely so they don’t burn!)
Notes:
This recipe works well with rock lobster tail meat, too. Just crack and remove the lobster tail shells and substitute for the scallops.
