Traditional Blondies

Yields: 12 ample cookie bars

Ingredients:
8 Tablespoons butter
1 ½ cups light brown sugar
1 ½ cups flour
1 ½ teaspoons baking powder
½ teaspoon salt
2 each eggs
1 ½ teaspoons vanilla extract
¾ cup pecans, chopped – optional
¼ cup walnuts, chopped – optional

Preparation:
Preheat oven to 325°

Lightly spray baking spray on the bottom and sides of a 9ʺ square baking pan.

Melt the butter in a large saucepan over low heat. Stir in the brown sugar until smooth. Remove from heat and let cool.

Combine the flour, baking powder and salt. Beat the eggs, one at a time, into the sugar mixture. Beat in the vanilla. Stir in the flour mixture gradually. Stir in the pecans.

Pour into the prepared pan and bake until Blondies come away from the sides of the pan, 50 to 60 minutes. Cool completely before cutting.

Notes:
Like brownies in shape and texture, Blondies are flavored with brown sugar in place of chocolate and have a rich, caramel flavor.

This recipe can be made in a 8″ square pan, but you should reduce the heat by 25° and might need to cook it a few minutes longer.
