This is a recipe from a very special ʺdress up fancy for a special occasionʺ restaurant that I used to go to before I had kids. It was a 2 hour drive on horrible, treacherous back country roads to get there, and the only reason I went there was for a slice of this pie!
Imagine my distress when I drove all the way out there one day and found out they were no longer making this pie! The owner of the restaurant was also the chef, and he had invented this recipe, adapting it from a ʺgrasshopper pieʺ recipe he liked.
The chef had suddenly decided to change the restaurant’s focus to ONLY ʺhealthy foodsʺ and could not justify serving this dessert anymore. He was kind enough to give me the recipe if I promised to never ask for it again, and I have never been back.
I have not tried the recipe because I was afraid the recipe might be incomplete as the chef just scribbled instructions down very quickly. But I will try it one day, it really is special.
