Best Banana Bread

Serves: 1 loaf
Ingredients:
1 cup sugar
¼ cup butter, softened
1 each egg
3 each bananas, overripe
1 teaspoon baking soda
1 teaspoon salt
1 ¼ cups flour
Preparation:
Preheat oven to 325°
In a large mixing bowl, cream the sugar and butter, then mix in the egg. Mash bananas with fork and add to the bowl. Stir in other ingredients.
Pour into greased and floured loaf pan and bake for 1 hour.
Notes:
Tastes best served warm, with a little butter or softened cream cheese spread on each slice.
After the first serving, tightly wrap any remaining bread in plastic wrap and store in the refrigerator for up to 4 days.

In a lot of recipes that call for greasing and flouring pans, I use sugar instead of the flour. That’s what I do for this recipe, it comes out really nice.
I like to add about ½ cup of chopped walnuts to the batter, or sometimes I finely chop ½ cup in a small bowl and stir in a couple tablespoons of light brown sugar and sprinkle this mixture over the top of the loaf about 10 minutes before the baking time is up for a crumble topping.
I made this last night. It was really easy and the family liked it.
In my opinion, the sugar can be reduced to just 1/2 cup, as the bananas add so much sweetness already, and this would really benefit from the addition of 1/2 cup of chopped walnuts or chopped pecans. I’m glad the recipe doesn’t require nuts, as some people have food sensitivities. But I will definitely add them next time.
