Seasoned Butter Peas
2 ½ cups water
1 package (12 ounces) frozen butter peas
1 small yellow onion, chopped (about 1/2 cup)
1 cube beef bouillon
⅛ teaspoon ground red pepper
1 bay leaf
Pour the water into a 2 quart saucepan and bring to a boil.
Add the rest of the ingredients and boil, uncovered, for 3 minutes.
Cover and reduce heat to barely simmer. Cook for 40 minutes.
Remove bay leaf, drain and serve warm.
Also works well with frozen lima beans.
I buy the butter peas locally at Food Lion in the freezer case section.
