Oriental Salad

Serves: 4-6

Ingredients:
½ head Chinese cabbage (also known as Napa cabbage)
4-5 green onions
¼ cup butter or margarine
1 package Ramen noodle soup mix (discard seasoning packet)
½ cup sliced almonds
1 Tablespoon sesame seeds
¼ cup sugar
⅛ cup rice vinegar
½ cup peanut oil
1 Tablespoon soy sauce

Preparation:
Slice the cabbage and onions thinly and put in a large bowl.
Melt butter in a skillet. Break the Ramen noodles into small pieces and add to the skillet, along with the almonds and sesame seeds. Stir until lightly browned, remove from heat and allow to cool.
In a small saucepan, mix together the sugar, rice vinegar, peanut oil, and soy sauce; boil one minute. Remove from heat and allow to cool.
Just before serving, mix together all ingredients.

Notes:
It is important to use rice vinegar – NOT regular vinegar.
Everyone loves this crunchy, Oriental Salad! You can turn this salad into a luncheon or dinner dish by adding bite sized pieces of chicken.
