Chinese Chicken Salad

Serves: 4
Ingredients:
Salad
2 packages (3 ounces each) instant ramen noodles, chicken flavor, flavor packets set aside
½ cabbage, thinly sliced
½ sweet onion, finely diced
1 whole poached or rotisserie chicken, de-boned and coarsely shredded
Dressing
1 cup Olive Oil
6 Tablespoons red wine vinegar
2 tablespoons granulated sugar
1 flavor packet from ramen noodles
Toppings (Optional – Mix and Match as Desired)
2-3 Tablespoons toasted sesame seeds
3-4 Tablespoons toasted pepitas (pumpkin seeds)
3-4 Tablespoons sunflower seeds
3-4 Tablespoons slivered or thinly sliced almonds
¼-½ cup crunchy chow mein noodles
Preparation:
Boil the ramen noodles as directed on package – but do not add the flavoring packets.
While the noodles are boiling, make the dressing by combining all ingredients. Set aside.
Drain and rinse the noodles under cold water.
In a large bowl, stir together the cabbage, onion and shredded chicken.
Add the cooked ramen noodles.
Add the prepared dressing and stir gently.
Add any additional toppings and serve.
