Home-style Meat Loaf with Tomato-Green Chile Gravy

Serves: 4
Ingredients:
1 large egg, lightly beaten
½ cup soft fresh breadcrumbs
1 small onion, minced
¼ cup ketchup
2 tablespoons Worcestershire sauce
1 ½ teaspoons salt
¼ teaspoon black pepper
1 ½ pounds ground chuck
Green Chile-Tomato Gravy
Preparation:
Preheat oven to 350°
lightly grease a 13″ x 9″ baking dish
In a large bowl, stir together first 8 ingredients just until combined. Shape into four loaves, about 4″ each, and place in baking dish.
Bake for 45 minutes or until meat is no longer pink in center. Serve with Tomato-Green Chile Gravy.
Tomato-Green Chile Gravy
Yields about 2 cups
2 Tablespoons butter
2 Tablespoons flour
1 can (14 ½ ounces) Rotel® Original diced tomatoes with green chiles, undrained
½ cup ketchup
½ cup water
Melt butter in a large saucepan over medium heat; add flour, stirring until smooth. Cook, stirring constantly, 1 minute.
Add the diced tomatoes with green chiles, ketchup, and water; cook, stirring often, 3 to 5 minutes or until thickened.
