Five Can Burger Soup

Serves: 5
Ingredients:
1 can Veg-All mixed vegetables
1 can Healthy Recipe Cream of Tomato Soup
1 can mushroom pieces
1 can potatoes, sliced
1 can stewed tomatoes
1 pound hamburger – browned and drained
Preparation:
Dump all ingredients into a large casserole dish. Cover and microwave for about 10 minutes on high, stirring occasionally.
Notes:
As is true with most soups and stews, this does taste better if allowed to simmer longer at a lower temperature, and tastes even better the next day, reheated. Sometimes, if I am home all day long, I will start it in the afternoon and simmer it on the stove top (or put it in the oven on a low temperature) for several hours.

When Michael and I first got together, he used to rave about his first wife’s cooking, especially about her special hamburger stew, and about how it took her all day to cook it, she chopped all the veggies by hand, and simmered it all day long.
One day he came over with a bowl of her stew for me to sample. I warmed it up, we ate it, and I told him I could cook stew so close he would not be able to tell the difference. He challenged me to try. The next day, I made him this recipe, and he really could not tell the difference!!!!! Not bad, a 20 minute recipe involving browning some burger, dumping in some cans and warming it up, compared to hours of chopping veggies and cooking all day!
One night, when I was first living on my own, I was in a ʺrutʺ and decided to get creative with stuff I found in my cupboard. This recipe was the result.
Sometimes I throw in a handful of macaroni noodles just for variety. This was one of the first meals I cooked for my first husband, and I think this is the meal that ʺwon his heartʺ (They say the way to a man’s heart is through is stomach!)
