4 each eggs, separated
1 ½ cups milk
1 each lemon, peeled and grated
2 tablespoons lemon juice

Serve warm or chilled, with confectioner’s sugar dusted on top.

A slightly different version of this recipe is on the Land O’Lakes official web site blog, Recipe Buzz, with step by step directions. Why not try both and let us know your thoughts in the comments?

Thank you to Land O’Lakes for the photo of a lemon pudding cake. This looks just like what my mom used to bake for us.

I have not actually made this recipe yet. I remember as a kid, Mom used to buy a mix that resulted in a lemon pudding cake that I absolutely loved. I can’t find that mix at the grocery store, and when I found this recipe, I thought it might be a close match to what I loved as a kid.
