Lemon Pudding Cake

Serves: 6
Ingredients:
6 tablespoons flour
6 tablespoons butter, melted
2 cups sugar, divided
4 each eggs, separated
1 ½ cups milk
1 each lemon, peeled and grated
2 tablespoons lemon juice
confectioner’s sugar for dusting
Preparation:
Preheat oven to 350°
Grease a 2 qt. baking dish
In a large mixing bowl, combine flour, butter, and 1 ½ cups sugar. Beat egg yolks, add to mixing bowl along with milk and lemon peel. Mix well. Add lemon juice.
In another bowl, beat egg whites until stiff, slowly adding remaining ½ cup sugar while beating. Fold into batter.
Pour into baking dish. Place the dish into a shallow pan of hot water and bake for 55 – 60 minutes or until lightly browned.
Notes:
Serve warm or chilled, with confectioner’s sugar dusted on top.

I have not actually made this recipe yet. I remember as a kid, Mom used to buy a mix that resulted in a lemon pudding cake that I absolutely loved. I can’t find that mix at the grocery store, and when I found this recipe, I thought it might be a close match to what I loved as a kid.
