Hot Fudge Pudding Cake

Serves: 8

Ingredients:
1¼ cups sugar, divided
1 cup flour
7 tablespoons Baking cocoa, divided
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
⅓ cup butter, melted
1½ teaspoons vanilla extract
½ cup light brown sugar, packed
1¼ cups water, hot

Preparation:
Preheat oven to 350°

In medium mixing bowl, combine ¾ cup sugar, flour, 3 tablespoons cocoa, baking powder and salt. Blend in milk, melted butter, and vanilla; beat until smooth. Pour batter into a square 8ʺ x 8ʺ x 2ʺ or 9ʺ x 9ʺ x 2ʺ inches.

In small bowl, combine ½ cup sugar, brown sugar and remaining 4 tablespoons cocoa; sprinkle mixture evenly over batter. Slowly and gently pour the hot water over the top; do not stir.

Bake 40 minutes or until center is almost set. Let stand 15 minutes: spoon into dessert dishes, spooning sauce from the bottom of the pan over top. Garnish with ice cream or whipped cream.

    If you only have dark brown sugar, try using only ¼ cup and mix it with ¼ cup of white sugar. I remember that shortly after I found this recipe and made it at home and loved it, I went to Mom’s house and, anxious to show off the recipe and I made it at her place, but she only had dark brown sugar. I made the recipe with the ½ cup dark brown sugar instead of light brown sugar and did not like it at all. Everyone was very polite and said it was good, but I thought it was awful. I was mortified! Here I was trying to show off my cooking skills and it came out badly!
