Ham and Cheese Quiche
1 Tablespoon butter
½ small yellow or sweet onion, chopped
1 unbaked 9″ deep dish pie shell
1 – 1½ cups chopped ham (about ½ of a regular ham steak)
3 each large eggs
¾ cup whole milk
1 cup shredded sharp cheddar cheese
6 slices Swiss cheese, cut into small cubes (about ½ cup)
Preheat oven to 350°
In a small frying pan, melt the butter over medium heat and sauté the onion just until tender and remove from heat.
Spread the chopped ham over the bottom of the pie shell.
In a small bowl, lightly beat the eggs with a whisk or fork. Stir in the milk, cheeses and onion. Pour the mixture over the ham in the pie shell.
Place the pie shell onto a baking pan, on the center rack of the oven.
Bake for 40 minutes or until the center of the pie is set. Serve warm.
You can adjust this recipe down for a regular pie shell instead of deep dish by reducing the eggs to 2 and the milk to ½ cup.
