3 cups corn meal
2 teaspoons baking powder
1 ½ teaspoons salt
1 ½ cups milk
½ cup water
1 large egg
1 medium onion, finely chopped
oil for frying
Heat about 1ʺ oil to 350° in electric frying pan or stovetop.
Beat together corn meal, baking powder, salt, milk, and water. Blend in the egg and onion.
Drop the batter, 1 teaspoon at a time, into the heated oil.
Fry until brown (about 1 ½ minutes each side.) Drain and serve warm.
For easy release of the batter, dip the spoon in a glass of cold water after each hushpuppy is dropped in the oil.
