Broiled Crab Balls Appetizer
Posted in : Appetizer, Party Food, Seafood on by : Noreen Tags: Crab, Noreen
Serves: 4 – 6
Ingredients:
1 egg, lightly beaten
1 tablespoon mayonnaise
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1 tablespoon parsley
1 tablespoon Old Bay Seasoning
1 sleeve saltine crackers, crushed
1 pound fresh crab meat
Preparation:
Preheat broiler
In a large bowl, mix together egg, mayonnaise, mustard, Worcestershire sauce, parsley, and Old Bay seasoning. Add saltines and crab meat and mix by hand to avoid breaking up too many of the lumps. You may need to break up the very large lumps however so the crab balls will stay together.
Shape into 24 balls about the size of ping pong balls and place on broiler pan.
Broil on high about 5 minutes, until golden brown, turning once.
Drain on paper towels.
Notes:
Serve with your favorite cocktail or tartar sauce, if desired.
My preferred brands include Duke’s mayonnaise, French’s mustard, and Lea & Perrins Worcestershire sauce.
