Apple Pie Candied Yams

Serves: 6-8

Ingredients:
2 tablespoons butter
½ cup orange juice
½ cup brown sugar, packed
32 ounces yams, drained
21 ounces apple pie filling
¾ cup raisins, seedless

Preparation:
Preheat oven to 350°

In a 2 quart casserole, melt butter on stove top over low heat. Add orange juice and brown sugar, and over low heat, stir until sugar dissolves. Remove from stove, stir in the remaining ingredients.

Cover and bake in oven for about 30 minutes.

Notes:
If you need to cook it at 325° with other foods requiring a low temperature, cook it for 45 minutes.

    It just isn’t Thanksgiving or Christmas at my house without this variety of candied yams. When I was a kid, I didn’t care for it much, (in fact, I “picked out” the yams!) but now that I am more mature, I like it a lot. If you really don’t like yams, just use one can of yams instead of two, and it tastes a lot more like apple pie.
