Zucchini Surprise Salad
2 Tablespoons dehydrated onion flakes
⅛ cup wine vinegar
¼ cup sugar
⅔ cup apple cider vinegar
½ teaspoon ground black pepper
⅓ cup salad oil
½ cup finely chopped green pepper
½ cup chopped celery
5 cups zucchini, sliced into paper thin rounds
chopped pimento, for garnish
Soak onion flakes in wine vinegar with the sugar, salt, pepper, oil and cider vinegar. Pour over the vegetables, mix well. Marinate and chill in covered dish for 8 hours or overnight. Drain and serve with garnishes.
Great for summer parties and picnics!
