Herbed Stuffing Meatloaf

Serves: 6 – 8
Ingredients:
2 each eggs, lightly beaten
¼ cup fresh milk
½ cup ketchup
1 Tablespoon Worcestershire sauce
1 small onion, finely chopped (about ½ cup)
2 cups dry stuffing, herb flavor
2 pounds ground beef
1 jar (12 ounces) Heinz® Home Style beef gravy
Preparation:
Preheat oven to 350°
In a large mixing bowl, stir the eggs, milk, ketchup and Worcestershire sauce together. Add the chopped onion and dry stuffing, then the ground beef. Mix well.
Transfer the mixture to a baking dish and lightly press into a loaf shape.
Bake for 1 hour. Remove from oven and pour about ⅓ of the jar of beef gravy over the top of the meatloaf. Set aside for about 10 minutes while you prepare the side dishes. Heat the remaining gravy in a small saucepan over medium heat (or pour into a microwave safe bowl and heat for 3 minutes on 50% power) and serve with the meatloaf.
Notes:
I use the Pepperidge Farm® brand of herb seasoned stuffing, but you can substitute the Stove Top® Savory Herb flavor stuffing.
A popular variation calls for 1 packet of onion soup mix to replace the chopped onion, but for my taste the soup mix is too salty and contains preservatives, so I stick with a fresh Vidalia onion.
This recipe can be halved to serve 3 – 4 people, but I like to make the full recipe to have plenty of meatloaf left over for use in cold meatloaf sandwiches the next day.
