Yuca – Cuban Style

Serves: 4
Ingredients:
½ teaspoon salt
1 Tablespoon olive oil
1 Tablespoon butter
1 – 2 pounds yuca, peeled and quartered
Cuban-style Sauce
1/2 yellow onion, diced
¼ cup olive oil
2 Tablespoons minced garlic
½ teaspoon fresh lemon juice
Preparation:
In a large saucepan, bring 3 quarts of water to boil. Add the salt, 1 Tablespoon olive oil. butter and yuca. Cover and cook about 15 minutes, until fork tender.
Drain and place in a serving bowl. Cover and set aside,
Prepare the sauce by adding all of the sauce ingredients listed above in a small sauce pan. Cook over medium heat about 5 minutes, until the onion and garlic are tender.
Pour the cooked sauce over the yuca and serve while warm.
Notes:
Yuca is a root vegetable very similar to white potatoes and very popular in Latin America. It is covered in a thick, bark-like skin that can be challenging to remove. You cannot use a vegetable peeler like for potatoes – use a sharp knife to slice it off with downward strokes, similar to removing the skin of a fresh pineapple.
