½ pound breakfast sausage, regular flavor (NOT maple or sage!)
1 unbaked 9″ regular pie crust – not deep dish
2 Tablespoons butter
½ small white onion, chopped
¼ green pepper, chopped
4 good shakes garlic salt
½ teaspoon salt
½ cup milk
4 ounces of your favorite cheese (we like Velveeta), either thin slices (Velveeta) or grated (Cheddar or Colby Jack mix).
Preheat oven to 350°
Heat large skillet over medium high heat.
Cook breakfast sausage, breaking up into crumbles as it cooks.
Once completely cooked, spread over the bottom of the pie crust.
In the same pan, melt the butter then add the chopped onions and green pepper, sprinkle the salt and garlic salt over the onions and green peppers, and cook until tender.
Spread the cooked onion and green pepper on top of sausage.
In a small bowl, lightly beat the eggs and milk together, pour over the ingredients in the pie crust.
Lay thin slices of the Velveeta cheese over the top – you don’t have to completely cover the pan.
Bake in oven for 30 minutes, or until the center is set. Allow to cool slightly but serve warm.
