Popovers – Made With Muffin Tins

Serves: 6

Ingredients:
1 cup flour, sifted
½ teaspoon salt
1 cup milk
2 large eggs
1 tablespoon sugar

Preparation:
Preheat oven to 425°

Beat ingredients with electric mixer just until smooth and pour into well-greased deep muffin cups (¾ full.)

Bake for 35 – 45 minutes until golden brown and serve immediately with your choice of butters or jams.

Notes:
Do not double this recipe. If you need more than 6 popovers, make these in batches.

It is important to keep oven door closed tightly while baking and don’t peek or the popovers will fail/collapse.

Popovers are supposed to be light and airy. The secret is a very light touch in mixing and a very hot oven for baking.

Best served piping hot – but if not serving immediately, you can poke a small hole in each to release steam and then microwave 6-8 seconds.

    The recipe says ʺdon’t peekʺ so it is a good idea to cook these in an oven that has a glass door so you can see exactly when they are done!
